Ingredients
- 1/4 cup almond butter
- 1/4 cup coconut sugar
- 2 tbsp maple syrup
- 2 tsp vanilla
- 1 egg
- 1.5 cups almond flour
- 2 tbsp coconut flour
- 1/2 tsp baking soda
- Handful dark chocolate chips or chunks
Instructions
- Preheat oven to 350 degrees
- Line a baking tray with parchment paper
- Place almond butter, coconut sugar, vanilla, maple syrup and egg in a food processor. Pulse for around 10 seconds, just until everything is combined
- Add dry ingredients to the food processor and pulse for another 20 seconds, just until everything is combined
- Roll into balls with a few chocolate chips/chunks in each ball
- Place on baking tray and flatten slightly with your fingers (the cookies will expand a bit)
- Bake at 350 for 11-15 minutes. Time will vary based on your oven
